Chicken Sausage Veggie Skillet

Ingredients:
1 lb Organic Chicken Sausage
1 tbsp Extra Virgin Olive Oil
1 Zucchini (cut in half moons)
1 Red Bell Pepper (chopped)
1 1/2 cups Broccoli (chopped)
1 Yellow Onion (chopped)
1 1/2 cups Tomato Sauce
4 ozs Goat Cheese (crumbled)
Directions:
Preheat oven to 400F
Heat a large oven-proof skillet over medium-high heat with a bit of olive oil.
Add veggies to cook until they begin to brown, approximately 15 minutes. When done, remove from pan and set aside. Add sausage to the pan, breaking up the pieces with a fork or spatula as you go.
When sausage is browned in the skillet, add veggies back to the pan, turn off heat, and cover everything with tomato sauce.
Crumble goat cheese on the top and bake for 10-15 minutes or until cheese melts. Serve with a scooping spoon.
Notes: Swap out veggies listed for what you have on hand.
