Honeydew Mint Ice Pops

When I was a kid, summer was spent playing in the yard, biking around the neighborhood, swimming at the lake… it was magical. During those hot summer days, my friends and I loved opening the large chest freezer in the garage and getting a relief of cold air while we reached in to grab a treat. Back then, Otter Pops were the THING! Nowadays, the artificial colors and high-fructose corn syrup aren’t really my jam… but, I’m all about making my own version! Check out how to make your own ice pops in the recipe below.

Flavor Ideas:

  • Honeydew Mint

  • Cherry Lime

  • Watermelon Mint

  • Mango Peach

  • Coconut Pineapple

  • Strawberry Basil

Honeydew Mint Ice Pops

Servings: 8

Prep Time: 15 minutes (then freeze overnight)

Ingredients:

  • 1/2 large honeydew melon, seeded, skin removed and cut into large chunks (about 3.5 cups once pureed)

  • 2 limes, juiced

  • 15 mint leaves

  • Optional: Sweetener of choice (Add no more than 1 tablespoon at a time when mixing, taste as you go)

Directions:

  1. In a large blender, add honeydew chunks, lime juice, and mint leaves and blend until smooth.

  2. Add sweetener based on sweetness of melon/taste preference.

  3. Pour into ice pop bags. (Link to disposable vs. reusable ice pop bags)

  4. Lay bags flat on a baking sheet and freeze overnight.
